In the summer we find ourselves drinking more tequila and more rum, the latter mostly in tiki drinks. We thought mezcal would provide a solid base to a tiki drink, and we found that the smokiness of mezcal pairs well with any sweet fruit that likes the grill — think peaches, bananas, or pineapple.
In The Summer of George, we pair a smoky mezcal with pineapple, in a desert-like cocktail that’s complex and refreshing.
What you need
- 2 oz. mezcal
- 0.75 oz. lime juice
- 0.75 oz. pineapple juice
- 0.5 oz. demerara syrup
- One dash tiki bitters
- Lime wheel for garnish
- Maraschino cherry for garnish
How it’s made
Add all ingredients, save the lime wheel and maraschino cherry, to a cocktail shaker with ice. Short-shake, then strain into a tiki mug or julep tin filled with crushed ice. Garnish with the lime wheel and cherry.
