At first glance, the Clover Club resembles what those who reinforce unfounded gender stereotypes might call a "girl drink", an overly-sweet concoction containing some kind of flavoured vodka. In reality, however, the Clover Club is a slight variation on a gin sour, utilizing raspberry syrup as a sweetener for a subtle flavour twist. Don't worry; if you make the drink according to our specifications, you'll definitely be able to taste the gin.
What you need
- 1.5 oz. gin
- 0.75 oz. lemon juice
- 0.5 oz. raspberry syrup
- 1 egg white
How it's made
Add the ingredients to a cocktail shaker without ice. Shake for 20 seconds, add ice to the shaker, and shake for another 6-8 seconds. Double-strain into a coupe glass. Garnish with a few raspberries on a cocktail pick if you like.
To make raspberry syrup, boil 2/3 cup of water with 2/3 cup of white sugar. When the sugar is dissolved, remove from the heat and add a cup of raspberries. Mash the raspberries, and let stand for at least an hour. Strain the mixture and keep in the refrigerator.
