This Cocktails About Nothing original started as a riff on Death & Co's Green Mile (not to be confused with Planet Hollywood's Green Mile, featuring melon liqueur and Malibu rum). We added mint and found it a winning combination with the lime and green Chartreuse.
The addition of an egg white gives the drink a rich texture, and an appearance evoking a Haribo Gummi Frog. We even tried garnishing with one, but discovered that, sadly, they do not float in liquor.
What you need
- 2 oz. white rum
- 0.75 oz. lime juice
- scant 0.5 oz. green Chartreuse
- 0.5 oz. minted simple syrup
- 1 muddled mint leaf
- 1 egg white
How it's made
Muddle a mint leaf on the bottom of a shaker. Add all the ingredients to the shaker, without ice, and shake for twenty seconds to fully emulsify the egg white. Add the ice and shake for five more seconds. Strain into a coupe with a mesh strainer.
Here's how to make more of the minted simple syrup, as we made before for the Mojito and the Mint Julep. Pick the leaves off one bunch of mint and set aside. Make sure to keep the stems. Bring one cup of water to boil in a saucepan and add the mint stems, boil for 2-3 minutes. Turn the heat down to medium and add one cup of sugar. Stir until all the sugar is dissolved. Remove from heat. Add the mint leaves and cover. Allow leaves to steep for about 10 minutes. Strain out the stems and leaves and allow to cool.
