If you liked our Brown Derby, you're going to love the Bees Knees.
A classic prohibition-period cocktail, the Bees Knees was “the best” way to consume that era’s poor quality gin. We use fresh grapefruit juice and honey syrup created using a 2:1 ratio of honey to hot water. Our variation includes lavender bitters and fresh lavender.
A Bees Knees is light, sweet and citrusy, with floral notes coming through from the gin, lavender and honey.
What you need
- 1.5 oz. gin
- 0.75 oz. honey syrup
- 0.5 oz. lemon juice
- 2 dashes lavender bitters
- 2 pinches fresh lavender
How it's made
Combine gin, honey syrup, lemon juice, lavender bitters and one pinch of the lavender in a shaker with ice and shake for 15 seconds. Double-strain into a coupe, and garnish with remaining lavender.
While honey syrup can be made in advance, we typically make it at a moment's notice. Simply mix two parts honey and one part water, the heat for a few seconds in a microwave.
