We came across the Lani-Honi a year or two ago on the wonderful Putney Farm blog and have been drinking them with some regularity ever since. At some point we started infusing the rum with tea to introduce some novel flavours. Rooibos and Earl Grey are our favourites so far. The Earl Grey Rooibos featured here is outstanding. This drink is easy to drink, made with rum and lemon juice complicated by the savour and spice of Bénédictine. The Lani-Honi is technically a tiki drink, but it will surprise you with its versatility. Refreshing on hot summer days and comforting on cold winter nights. Enjoy.
What you need
- 1.5 oz. Bénédictine
- 1 oz. tea-infused white rum
- 0.75 oz. lemon juice
- lemon twist for garnish
How it's made
Shake all ingredients with ice and strain into a rocks glass over a large ice cube. Garnish with a lemon twist.
To infuse white rum combine 1 heaping tbsp of tea with 1 cup of rum. Stir and let sit for 1-2 hours until desired infusion is achieved.
